Making money at home on the homestead can be challenging. Sometimes, we have no livestock or vegetables to sell. So, we have to be part of the new techno-geek society and earn extra income that way. But, what if you don't know how to do this?

For All Sausage Recipes:

Combine all dry ingredients and stir well.
Sift dry ingredients into meat with clean washed hands like you would with bread dough.
Run through grinder again if you wish. Sausage Casing may also be used but it is less expensive to form and flatten patties, package in freezer bags and freeze.

Various Sausage Recipes

Lean Breakfast sausage:

15 pounds regular ground meat from animal
5 teaspoons salt
5 teaspoons pepper
1 tbsp garlic powder
small amount of cayenne pepper if you like spicy hot!

Italian Sausage:

12 pounds meat
2 pounds fat (beef or pork)
2 teaspoons salt
1 teaspoons pepper
2 teaspoons fennel seed
2 teaspoons garlic
1/2 red pepper

Homestead Country Sausage:

10 pounds meat
2 tablespoons salt
4 teaspoons sage
4 teaspoons pepper

or 8 pounds meat
2 tablespoons salt
8 teaspoons sage
4 teaspoons pepper
1 teaspoon ground cloves
2 teaspoons nutmeg, thyme, or allspice (or combination)

or 10 pounds meat
1/2 teaspoon marjoram
1 teaspoon dried mustard
2 tablespoons salt
1 tablespoon pepper

Spicy Country Sausage

10 pounds meat
2 tablespoons salt
5 teaspoons pepper
Add your choices of:
-2 1/2 teaspoons dry mustard
-2 1/2 teaspoons cloves
-5 teaspoons cayenne pepper
-6 1/2 tablespoons sage
-5 teaspoons fennel seed
-2 teaspoons garlic
-5 teaspoons marjoram

Quantity sausage recipe

100 pounds ground meat
3/4 cups salt
1/4 to 1/2 cup sage
1/4 to 1/2 cup pepper
1/8 to 1/4 cup cayenne pepper
1/8 to 1/4 cup ground cloves
or 1/4 cup nutmeg
optional:
1/4 to 1/2 garlic powder
