Make Money At Home

Making money at home on the homestead can be challenging. Sometimes, we have no livestock or vegetables to sell. So, we have to be part of the new techno-geek society and earn extra income that way. But, what if you don't know how to do this?

Melody’s Marvelous Muffins

Ingredients

In a large bowl, mix:
2 c. flour (may be half whole wheat)
¾ c. brown sugar
2 tsp. baking powder
2 tsp. soda
Pinch of salt
1 c. bran or grain mix
(Grain mix: ½ c. bran, ¼ c. oatmeal, ¼ flax seed or Red River cereal.)

Mixing The Muffins

Make a well in center and add:
2 c. milk
¾ c. oil
2 eggs

Beat liquids until eggs are broken up, then mix everything together just until blended.

Add 1 c. fruit or nuts. You can use: raisins, dates, bananas, apples, blueberries, dried cranberries, mincemeat (add ¼ c. flour), walnuts, pecans, peanuts, macadamias, in any combination you wish. My family especially likes the dried cranberries with the grain mix listed above.

Fill well greased muffin tins ¾ full. Bake at 350 degrees Fahrenheit for 25 minutes. Makes two dozen muffins.

What’s marvelous about these muffins is that they provide healthy fiber in an endless variety of ways. Have fun coming up with your own combination’s!
